Yesterday’s lunch. . . .

Love these balls. . .
So yesterday afternoon I went checked out the yoga class at my local gym. The gym itself is insanely large and crowded and it took me a while circling the parking lot to find a good spot. I am not going to park out in the boonies and walk back to my car in the dark. No. That just won’t do for me.
Anyways, the class itself was fine. Sun salutations, core work, plenty of warrior poses. . . and I realized I had the same instructor at another gym before and he does pretty well, but it’s not the same. Not the same as the awesomeness that is the yoga studio I love. I wasn’t as grounded as I normally feel in the studio and the flow didn’t work too well with me. I was just glad I was doing yoga though. while working my left leg, the outer portion of my thigh down to my knee was extremely achy. This does not bode well.
From there I went home and went to take the recycling and garbage out to the street when I came across this on the fence halfway between me and the bins.

I screamed, collected myself and waved my hands at it saying “Shoo! Shoo!” It scampered closer towards me hissing. Eeep! The husband came running and asked why I screamed and I pointed at the giant marsupial growling on our fence. Eric ran inside, I followed and we ended up out the garage door, him carrying a mop and me a giant flashlight that can signal for UFO’s. Eric went all caveman on the possum, scaring it away. I ended up not taking the recycling or garbage out. Darn possum could have been hiding on the other side of the fence.
Dinner happened. I had shrimp fried rice on the mind and had it in my head that we had a Trader Joe’s bag of it. When I checked the freezer, it was just a bag of shrimp. But I did not let it deter me. I set to work on making my own.
I set a pot of brown rice to cook and set up the scene. I basically followed this lovely recipe.
Only thing I added was garlic and snap peas to the mix. The snap peas added a great crunch texture. Eric said he could have done with out them.
Obviously, I didn’t read all the information because it HIGHLY recommends using day old rice for fried rice. Or you will end up with mushy rice. Like I did. But it was still very good
Next time, I will make the rice ahead of time and freeze it so when the urge for fried rice comes again, it will be ready for frying.

1. Kevin Bacon is HOT. I don’t know why, but I love this rugged quality to him. Yum.
2. I love the usage of Edgar Allen Poe within this series. It’s violent, intense, and romantic. Be still my beating heart. (I have a dark side I have to indulge)
3. I admit I probably would have been seduced by Carroll.
I really have been enjoying this series so far. The story, the acting, the intensity. Good. But, I have been able to predict A LOT of what would be happening in the show. I’m one of those that talks out loud with ideas of what will happen in a show while at home. I am 90% accurate. It impresses the Husband and drives him nuts at the same time. It takes some of the luster out of the show for me, being able to figure out what’s coming, but when I don’t, whoa, it leaves me a little rattled and eager for more.
After two episodes, I hit the hay. This morning I was doing my chores and searching for some Bell jars that went missing from the counter, when I heard the rumbling of garbage trucks. I looked out the back window and saw the top of a truck on the street over driving around and immediately flew out the door to the garage to get the bins out onto the street. No sooner had I put the bins out, did I see one of the trucks turning the corner onto our street.
Score one for me!
But I was just informed by the Husband that he had tossed my jars into the recycling the night before. >\ angry face. Apparently he didn’t know what they were and that I used them. Grrrr. :deep breath: Just jars. I can replace them.
Still.
Grr.
I made breakfast of a protein scramble with egg whites, a power green mix and tomatoes.
Today’s agenda includes work and errands. Debating between running 4 miles today followed by aqua aerobics at the gym or run 4 miles at home with Lando and swim tomorrow? I got 9 miles planned for Sunday.
Painting is planned for Saturday. . .
And Sunday is run plus house chores.

Fried rice is so delicious! I love making it with just vegetables or with vegetables and tofu. I also really enjoy making fried quinoa. Sooo tasty

Completely agree it’s delicious! I was tempted to add more veggies to it last night but the stomach was growling. Going to broil up some brussel sprouts to have with the left overs tonight
What is in those balls? It looks like something I want!
I too am totally in love with The Following. My bf is just like you… he is so good at predicting shows. I always tell him he should be a writer for one
We only watch two eps at a time for the Following so episode 5 is in our que. Episode 3 did throw me a curve ball, which I liked.
